The best Ugni Blanc grapes are fermented, and distilled twice in copper pot stills, to create Hennessy's trademark Eaux-de-vie. To make a lighter and more delicate Cognac, Hennessy removes grape skins and other sorts of sediment. Only the greatest Eaux-de-vie will be chosen after distillation by a select committee of experts during tasting sessions.

To age its VS Cognac, Maison Hennessy uses French Limousin oak casks, which offer a strong, nutty aroma that complements the light and fruity grape notes. The wood for the casks has been left outside for several years, exposing it to the changing seasons to eliminate bitter flavors and produce a natural vanilla sweetness before they even contact the alcohol.
