Hennessy V.S.O.P. Privilege Cognac, which Hennessy meticulously distills, is well-known for its fruit, cinnamon, candied, and vanilla taste notations. The highly aromatic cognac has ventured into the dried fruit zone with raisins, apricots, and dates. Floral fragrances are prevalent as well, with a violet undertone. The aroma of mulled wine remains, with baking spices such as cinnamon and clove shining out in particular. As you get into the tongue, the brandy has a zesty vitality, with the fragrance characteristics still there. There's a distinct sweetness here, but it's not overpowering. There's just enough bitterness, in the end, to keep things interesting. This is a fantastic step-up for newcomers to cognac because it isn't only about fruit.

SAZERAC COCKTAIL
The cognac's richness and spiciness, combined with the bitters and toned off by crisp lemon notes, harmonize wonderfully with the Absinthe. Combine the cognac, syrup, and bitters in a mixing glass with ice cubes. Stir until thoroughly cold. Pour into a rocks glass rimmed with Absinthe. Garnish with a twist of lemon.
COCKTAIL VIEUX CARRÉ
Fill a mixing glass halfway with ice cubes. Stir for 8 seconds after adding the cognac, Sweet vermouth, Bourbon whisky, Angostura bitter dash, Peychaud bitter dash, and Bénédictine. Pour into a glass after straining. Garnish with orange zest if desired.
